Vegan chickpea flatbread with garlicky spinach from Zizi’s cookbook.
This simple vegan and gluten-free 2-ingredient chickpea flatbread makes a great breakfast or weeknight dinner. It’s easy to make, high in protein and it’s totally customisable. You can play around with your favourite spices here, or you can even add extra veggies to the flatbread. The garlicky spinach and the slightly nutty flatbread are a match made in heaven, but hummus, a spiced homemade cashew cream cheese or a simple tomato sauce go really well with this chickpea flatbread too.
Today I do something I’ve never done before and to be honest I thought I’ll never ever do here: I write in Hungarian! Whaaaaaat?! Yes, it’s happening. Since this recipe is from Nagy Zita‘s Vegan Breakfast cookbook (which is only available in Hungarian at the moment), I guess it would make more sense to write about it in Hungarian. Sorry, guys, I promise I will not make a habit out of this.

Ingredients
For the chickpea flatbread
- 100 g chickpea flour
- 300 ml water
- 1/2 tsp thyme
- salt, pepper
For the garlicky spinach
- 500 g fresh spinach
- 2 cloves of garlic, minced
- 3 tbsp plant milk
- 1 tbsp olive oil (optional)
- pinch of nutmeg
- salt, pepper
Instructions
Chickpea flatbread
- In a large bowl whisk together chickpea flour, water, thyme, salt and pepper. Let rest for 30 minutes.
- Preheat oven to 230Β°C/440ΒΊF. Grease a 20×30 cm/8×12 inch baking dish (or use a silicon one) and pour the batter into the dish (it should be 5 mm/0.25 inch thick). Bake for 20 minutes or until golden-brown.
Spinach
- Meanwhile heat a large pan over medium heat. Add spinach, olive oil or 1-2 tablespoons of water, and cook for 4-5 minutes. Add garlic and season with nutmeg, salt and pepper. Cook on for 5 minutes, then add milk. Mix well and cook for another 3 minutes.
- Serve immediately with chickpea flatbread. Enjoy!

Instructions
Pite
- Egy tΓ‘lban keverjΓΌk csomΓ³mentesre a csicseriborsΓ³lisztet a sΓ³val Γ©s kakukkfΕ±vel. Folyamatos kevergetΓ©s mellett lassan ΓΆntsΓΌk hozzΓ‘ a vizet, amΓg sima, hΓg tΓ©sztΓ‘t kapunk. TegyΓΌk fΓ©lre 30 percre pihenni.
- MelegΓtsΓΌk elΕ a sΓΌtΕt 230 fokra. Egy 20×30 centis tepsit kenjΓΌnk ki olΓvaolajjal (vagy hasznΓ‘ljunk szilikon formΓ‘t) majd ΓΆntsΓΌk bele a tΓ©sztΓ‘t (kb. 4-5 millimΓ©ter vastag legyen).
- SΓΌssΓΌk 20 percig, amΓg aranybarna nem lesz a teteje.
SpenΓ³t
- AmΓg sΓΌl a pite, kΓΆzepes hΕfokon hevΓtsΓΌnk fel egy serpenyΕt. ΓntsΓΌk bele az olΓvaolajat (vagy 1-2 evΕkanΓ‘l vizet), majd tegyΓΌk bele a spenΓ³tot. PΓ‘roljuk 4-5 percig, amΓg egy kicsit ΓΆsszeesik, adjuk hozzΓ‘ a fokhagymΓ‘t is. ΓzesΓtsΓΌk sΓ³val, borssal Γ©s szerecsendiΓ³val.

It looks lovely. I saw chickpea flour, but I didn’t use it before. Is the texture similar to a polenta?

Thanks, Anca! I’m not sure if there’s a type of chickpea flour, that has a similar texture to polenta, the ones I’ve tried were always very fine flours.

My Hungarian reduces itself to nemtudok (and no idea how to spell that!!!!) and the names of some typical Hungarian dishes that are eaten all across Transylvania. π But I love this recipe, I have some chickpea flour in my pantry and was thinking it is time to use it for something before it expires… This flatbread sounds great! The spinach too.
