The Best Tomato Sauce for Pasta with Vegan Parmesan

Ingredients
  • 10 cherry tomatoes
  • 6 sun-dried tomatoes
  • 3 tbsp tomato paste
  • 1 small chili
  • ½ cup of fresh basil
  • 2 tbsp dried oregano
  • 1 clove of garlic
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • salt, pepper
  • For the parmesan:
  • 1 cup of cashews
  • ½ cup of nutritional yeast
  • ½ tsp garlic powder
  • ½ tsp salt
Instructions
  1. Deseed chili then add every ingredient for the sauce to a food processor and blend until smooth. Pour the sauce over the warm cooked pasta. You can also heat up the sauce before serving.
  2. For the parmesan add everything to a food processor and pulse until fine. Store in a jar in the fridge. Enjoy!
