Low Fat Oat Blueberry Muffins

Ingredients
  • 2 cups rolled oats, ground
  • 12 dates, pitted
  • ¾ cup applesauce (180 g)
  • 1 cup blueberries (100 g)
  • ¾ cup water (180 g)
  • 1.5 tbsp ground flax seed
  • ¾ cup plant milk (180 g)
  • 1 tbsp baking powder
  • ½ tsp cinnamon
  • ½ tsp vanilla
  • 1 tbsp brown sugar (optional)
Instructions
  1. Start by putting flax seed, milk, water, and dates into a bowl. Set it aside while preparing the rest.
  2. Preheat oven to 400° and get out your muffin forms or pan. Use non-stick or silicone if possible.
  3. In a large bowl, whisk together all of the dry ingredients. Your ground oats, the baking powder, and spices. Don’t forget about the sugar here, if you want to add some extra sweetness.
  4. Add the flax-date mixture together with the applesauce in a blender and create a nice even mix.
  5. Pour this mixture into the bowl with your dry ingredients and stir until everything is moistened. Finally, fold in the blueberries.
  6. Pour your batter into the muffin cups and bake on 400°F/200°C for 20 minutes. Remove from oven and let cool before eating.
