Sweet Potato and Apple Salad with Miso Dressing

Ingredients
  • 2 sweet potatoes
  • 1 green apple
  • 1 can of chickpeas
  • 2 large handful of mixed greens
  • 1 handful of roasted almonds
  • 1 tbsp pumpkin seeds
  • 1 tbsp pine nuts
  • cinnamon, pepper, chili
  • olive oil
  • for the dressing:
  • ¼ cup of sunflower seeds (preferably soaked)
  • ¼ cup of cashews (preferably soaked)
  • ½ cup of water
  • 1 tsp miso of your choice
  • 1 lime
  • 1 tsp mustard
  • 2 tbsp nutritional yeast
  • 1 tbsp olive oil
  • salt, pepper
Instructions
  1. Preheat oven to 200°C. Cut sweet potatoes into small cubes, drizzle a bit of olive oil on them and sprinkle cinnamon, chili and pepper on top. Bake them for about 30 minutes.
  2. For the dressing put everything in a blender or food processor and blend until smooth.
  3. Lay mixed greens on a plate, add warm sweet potatoes, thinly sliced apples and chickpeas, pour dressing over and top with roasted nuts and seeds. Enjoy!
