I love the good old Waldorf salad! Apple, celery and walnut are such a winning winter combination. I mentioned it before, but this time of the year I feel like eating salads all the time. Salads can give me a huge energy boost, which is all I need nowadays. I try to keep my salads seasonal, so no wonder that this kale Waldorf salad is often on our table in these months.
To be honest I’ve never been a huge fan of mayo, so I mostly eat Waldorfs at home leaving the mayonnaise out. I like to use yogurt or some nut or seed cream as a dressing, it’s just so much more better that way! Healthier, tastier and definitely not that heavy.
Just like always, you can add so many extras to this salad. First of all, caramelized walnuts are possibly the coolest topping in the world, they make any salad taste extra special. But pecans are also pretty cool. If I need a very filling salad, I like to add some croutons too, or just simply use double amount of the dressing. Or for example with adding a bit of cooked quinoa this salad will be satisfying for anyone.
