For the very first time I am gonna host the Christmas dinner, so believe me, I am super excited! Excited, happy and anxious at the same time. Normally I am kind of confident with my kitchen skills, but when suddenly the whole Christmas dinner is depending on me, I start to doubt myself. Not to mention the pressure, that I wanna serve a vegan dinner for people who are….hmmm….let’s call meat-friendly. But my lovely boyfriend says it is gonna be okay, so I try not to worry.
Since we are all busy and focusing on the big dinner, it is easy to forget to eat. I mean to eat well. So I thought you could use a quick and easy salad recipe, which is very-very filling, so it will give you energy for the whole day. You can make a huge portion and keep it in the fridge, and eat the next day too! So please don’t forget to eat regularly and try to keep the stress levels low! I wish you a very happy Christmas!
PrintMassaged Kale Salad with Quinoa
- Total Time: 10 mins
- Yield: 2-4 1x
Ingredients
- 100g kale
- 1 cup of cooked quinoa
- 2/3 cup of black olives
- 1 handful of walnuts
- 1 handful of pine nuts
- 1/cup of vegan caesar dressing*
Instructions
- Prepare the kale by removing the stems and tearing them into small pieces. Add the leaves to a big bowl with the dressing and massage them together for 2-3 minutes.
- Add the quinoa, olives and roasted pine nuts and walnuts and mix everything well together. Enjoy!
