Cabbage Salad with a Mandarine, Ginger and Tahini Dressing

Ingredients

  • 300g red cabbage
  • 2 carrots
  • 1 pomegranate
  • a small handful of sunflower seed
  • For the dressing:
  • 2 tbsp tahini
  • 2 mandarine
  • 1 lime
  • ginger
  • 2 tbsp olive oil
  • salt, pepper


Instructions

  1. Using a mandolin or a sharp knife cut the cabbage and the carrots very thin. Add them to a bowl with the sunflower seed and the pomegranate seeds.
  2. Mix everything well together for the dressing and pour over the salad. I highly recommend you to keep it in the fridge for at least half an hour before serving. Enjoy!
