- 4 cups of salad greens
- 2 figs
- 1 scallion
- 1/3 cup fresh or frozen peas
- 1/3 cup tofu feta cheese
For the dressing
- 2 tbsp apple cider vinegar
- 2 tbsp mustard
- 2 tbsp maple syrup
- 1/4 tsp garlic powder
- salt, pepper
Instructions
- Slice figs, chop scallion, then add to a bowl with the salad greens, tofu feta and fresh peas (if using frozen, place peas in a colander and run it under hot water for a minute to thaw, then let drain). Mix well together.
- For the dressing combine vinegar, mustard, maple syrup and garlic powder, then season with salt and pepper.
- Drizzle the salad with the dressing. Enjoy!
