- 2 cans of lentil
- 300 g brussels sprout (about 2 cups of thinly sliced brussels sprout)
- 1 purple onion
- 1 pomegranate
- 1/4 cup of pine nuts, lightly toasted
- 1 orange, juice+zest
- 1 lime, juice
- 1 tbsp maple syrup
- 2 tbsp tahini
- 1 tbsp olive oil
- salt, pepper
Instructions
- Shave brussels sprouts (using a sharp knife, a food processor or a mandolin), drain and rinse lentils and slice onion thinly. Add everything to a large bowl with pine nuts and seeds of half of the pomegranate.
- Prepare dressing. Mix together juice of lime, orange and the other half of the pomegranate, orange zest, tahini, maple syrup, olive oil, salt and pepper. Pour over the salad and mix well together. Enjoy!
