Ingredients
Scale
- 4–5 large handful of kale
- pine nuts and pumpkin seeds for topping
- for the dressing:
- 2 tbsp tahini
- 1 lime
- 1 mandarine
- 1/2 grapefruit
- 1 tsp fresh thyme
- salt, pepper
Instructions
- Squeeze the citruses and mix the juices with tahini, thyme, salt and pepper until smooth.
- Prepare kale by removing the stems then tearing into small pieces. Add the leaves to a big bowl with the dressing and massage them together for 2-3 minutes. Serve with pine nuts and pumpkin seeds on top. Enjoy!
