- 1 kg purple potatoes
- 3–4 tbsp olive oil
- 1 clove of garlic
- thyme, parsley, salt, pepper
- handful of pine nuts
Instructions
- Boil the potatoes in salty water for about 20 minutes or until they are fork-tender. Drain them and let them cool for a few minutes, so you don’t burn yourself.
- Preheat oven to 200°C. Arrange the potatoes on a baking tray and smash them using a cup or glass or a small bowl.
- Mix the olive oil with the crushed garlic and spices and drizzle the potatoes with the mixture. Bake them for about 20 minutes, then garnish with herbs and nuts. Enjoy!
