- 2 sweet potatoes
- 1 green apple
- 1 can of chickpeas
- 2 large handful of mixed greens
- 1 handful of roasted almonds
- 1 tbsp pumpkin seeds
- 1 tbsp pine nuts
- cinnamon, pepper, chili
- olive oil
- for the dressing:
- 1/4 cup of sunflower seeds (preferably soaked)
- 1/4 cup of cashews (preferably soaked)
- 1/2 cup of water
- 1 tsp miso of your choice
- 1 lime
- 1 tsp mustard
- 2 tbsp nutritional yeast
- 1 tbsp olive oil
- salt, pepper
Instructions
- Preheat oven to 200°C. Cut sweet potatoes into small cubes, drizzle a bit of olive oil on them and sprinkle cinnamon, chili and pepper on top. Bake them for about 30 minutes.
- For the dressing put everything in a blender or food processor and blend until smooth.
- Lay mixed greens on a plate, add warm sweet potatoes, thinly sliced apples and chickpeas, pour dressing over and top with roasted nuts and seeds. Enjoy!
