- 10 cherry tomatoes
- 6 sun-dried tomatoes
- 3 tbsp tomato paste
- 1 small chili
- 1/2 cup of fresh basil
- 2 tbsp dried oregano
- 1 clove of garlic
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- salt, pepper
For the parmesan:
- 1 cup of cashews
- 1/2 cup of nutritional yeast
- 1/2 tsp garlic powder
- 1/2 tsp salt
Instructions
- Deseed chili then add every ingredient for the sauce to a food processor and blend until smooth. Pour the sauce over the warm cooked pasta. You can also heat up the sauce before serving.
- For the parmesan add everything to a food processor and pulse until fine. Store in a jar in the fridge. Enjoy!
