1.5 cups cooked chickpeas
1 shallot, roughly chopped
3 garlic, minced
2 tbsp cashew butter
1 cup of cooked quinoa
1/2 cup of chickpea flour
1 tsp mustard
1 tbsp tomato paste
1/2 tsp chili flakes
3 tbsp chopped, fresh herbs
salt, pepper
Instructions
- Place chickpeas, shallot, and garlic in a food processor, and pulse a few times, until chickpeas have a coarse texture. Transfer to a mixing bowl. Alternatively use a potato masher to mash chickpeas coarsely.
- Add the rest of the ingredients to chickpea mash, and mix well, until everything is combined. Adjust consistency with chickpea flour if the mixture is too wet, it should be moist but moldable.
- Shape the mixture into 4 patties, then place on a baking tray.
- Bake patties at 180°C/360°F for 35-45 minutes, turning them over once halfway through baking time.
- Serve patties on buns with condiments and toppings of your choice. Enjoy!
