Cranberry and Almond Energy Balls

If I crave something sweet it should be quick, easy and small. Bonus if it is still good the next days too. So something like these cranberry and almond energy balls are definitely my sweethearts.

I really enjoy energy balls. I can use any dried fruits, nuts, probably nut butters and they make the perfect dough for these balls. They are sweet and filling, small enough to take with you anywhere, if you need some quick energy and pretty enough to share it with your friends. And the best part, that you don’t have to work a lot, your food processor will make almost everything for you. Such a win!

This recipe makes about 20 small balls, which should be good for a few days in the fridge. And although I don’t have a sweet tooth, I have to admit they didn’t last longer than a few hours…..so feel free to double the amount.

Cranberry and Almond Energy Balls

Ingredients

Units Scale
  • 50 gr dried cranberries
  • 50 gr dried blueberries
  • 5 medjool dates
  • 1 tbsp cacao powder
  • 1/2 cup of walnuts
  • 1 tbsp almond butter
  • 1 tsp coconut oil
  • 1 tbsp chia seeds


Instructions

  1. Place the walnuts in a food processor and blend until it forms a flour like mix. Add the berries, dates, cacao, almond butter, chia and coconut oil, and blend until a nice, sticky dough forms.
  2. Roll the mix into bite size balls and store in fridge. You can roll them in ground almond/hazelnut, cacao or chia, as I did now too. Enjoy!

    I always have energy balls on hand whenever I need a healthy snack so this is a perfect recipe for me. They look so incredibly delish and moorish!
