I have to say, there was a time, I didn’t really understand, why people make chopped salads. They taste good of course, but who needs that much work for a simple little salad???

And then I got my first sharp and good knife set and my life has changed. Or at least my salad life…..chopped salad life.

Simple Green Chopped Salad

If you have a good knife, it takes 5 minutes to make any kind of salad, whatever you have in your fridge. Because that’s the very best in chopped salads, you can use anything you have and they’ll just taste amazing together. Perfect way to use all that leftover veggies, what you don’t feel like eating anymore. They can be old and not the best looking, but you will not notice it in your salad. Bon appetite!

Ingredients

Units Scale
  • 1/2 cucumber
  • 50g rocket
  • 50g baby spinach
  • 1 avocado
  • 2 scallions
  • 1 handful of fresh basil
  • garden cress
  • 1 tbsp tahini
  • 1 tsp mustard
  • 1 lemon
  • 2 tbsp olive oil
  • salt, pepper, oregano
  • pine nuts


Instructions

  1. Put all your salad ingredients on a huge cutting board and using a sharp knife start chopping. Once everything is finely chopped put them in a huge bowl.
  2. Add the tahini, the mustard, the juice of a lemon, the olive oil and the spices to the salad and mix it well together. Enjoy!

    My mouth is watering. I love a good chopped salad, and you have put all of my favorite green veggies in one. I can’t wait to try this!

      I love them too! Especially the one color ones, I feel like eating a yellow one for today lunch 🙂
