Rhubarb and Pomegranate Lemonade

If you are looking for the most refreshing and delicious spring drink recipe, here it is: Rhubarb and Pomegranate Lemonade!!! It’s sweet, tart, cold, fresh, fruity and also easy to make without a juicer!

Rhubarb and Pomegranate Lemonade

I had to realise I’m also getting older, going out and drinking everyday for a week is not something I can handle anymore. I had a wonderful week in Hungary with great food and drinks, but my body needs some detoxification now. So it’s juicing time! And though I love my green juices I need something else too, something super tasty and something that makes me happy. Yes! It’s rhubarb! This drink is great and not just for detox days but any day! And if you are still in the drinking mood, try it with vodka. So goooood!!!!

Ingredients

Units Scale
  • 2 cups of chopped rhubarb (about 1/2 kg)
  • 1/2 cup of pomegranate seeds
  • 1/2 cup of chopped apple
  • 1/2 lemon, juice
  • 2–3 tbsp maple syrup
  • pinch of vanilla powder
  • 2 cups of water
  • 3–4 ice cubes


Instructions

  1. Add everything to a blender and blend for a half minute.
  2. Pour the mix through a cheesecloth or a strainer to separate juice from pulp. Serve lemonade with ice cubes. Enjoy!
  • Prep Time: 10 mins

    This is so lovely Evi! It’ s the same color as the juice I just posted, but totally different. Your pictures are gorgeous! I can’t wait until rhubarb is available here because I really want to make this.

      Same with me! I can only buy rhubarb in 1-2 kg packages, that’s way too much for a dessert for one or two, that’s why I started to juice it 😉

    Sounds delicious. I might try this as well this spring. I am normally making a rhubarb syrup using the rhubarb peel, that people normally throw away. It is really good and keeps forever in the celler. But your recipe sounds somewhat even more refreshing.

        As you live in Germany, you must definitely know Chefkoch. I cannot copy the link with the tablet but look for Rhabarbersirup von Buschkoch. I’ve making it for 3 years now, we like it a lot.

          Sounds very cool! I am always looking for recipes to preserve seasonal flavours, I think I’m gonna give it a go! Have you ever tried to make it with coconut sugar or maple syrup for example? I don’t really use white sugar and I have no idea if it will last that way too 🙂

            I found the recipe on Chefkoch.de but I think it is pretty much the same one. The one on Chefkoch doesn’t have Zitronenmelisse but that is great too, I have a lot of it in the garden. I only made it with white sugar but you only need a little bit of the syrup to get a full glass once it’s filled with water, so I didn’t worry much about it. Maybe we should try to make it healthier, starting with smaller amounts of syrup and see how long it will stay good. I don’t know if canning would work with syrup, by that I mean einkochen. 🙂 but I suppose it is worth a try.

            Yes! I’m gonna try it! Rhubarb is so cheap nowadays everywhere, I really wanna make a lots of juice, syrup and dessert with it!
            And btw so funny how you mix german and english, I talk exactly like this everyday – seriously!!! 😀
