Snow Peas Salad

This snow peas salad takes about 5 minutes to prepare and requires only a few ingredients but tastes amazing! The sweet peas with some lemon zest and chili are a wonderful combination!

Snow Peas Salad

I really love snow peas, in general any type. They are just so sweet! I remember when I was small it was my favorite snack from my grandparents’ garden. We were sitting next to each other on a small stool, they were shelling the peas for lunch and I was eating them all. They must have been so happy! 😀

This hasn’t really changed, most of the time when I get my hands on fresh peas I still eat them right away as a snack, so I rarely make any dish with them. But now I was strong, and kept some for this delicious salad. I definitely didn’t regret it, this salad tastes so good, so fresh!

Ingredients

Units Scale
  • 2 cups of snow peas
  • half of a cucumber
  • 2 cups of rocket salad
  • 1/2 cup of roasted almonds
  • 3 tbsp olive oil
  • 1 lemon
  • chili, salt, pepper


Instructions

  1. Slice cucumber, cut snow peas thinly lengthways and chop almonds roughly. Add to a bowl with the rocket.
  2. Make a dressing with olive oil, juice of a lemon and some salt and pepper. Pour over the salad and mix well together.
  3. Sprinkle some chili on top and the zest of a lemon. Enjoy!

    I love a simple and quick salad like this! It also looks delicious! I can’t remember the last time I cooked with snow peas and I’m trying to figure out why! They look like they would give such a great crunch to this salad and I love the lemon 🙂

      Thanks, Izzy! I also cook rarely with snow peas, they don’t really sell them here or they cost horrible expensive. I guess because they don’t grow them here 🙁

    Evi, your photographs! My goodness, stunning! They’re sharp, the contrasting colors are beautiful, the light is soft and airy! Well done! And this salad…. well, I can’t wait for snow peas to come in season here. They are one of my most favorite veggies, yet their season is way too short. When we had our garden we grew tons of snow peas, because we love them so much… we’d sit, come harvest time, and eat and eat and eat…. they are best fresh, for sure, so I can see why you’d much on them while picking! Thank you for this fresh recipe! Saved for Spring!

      Ah, you had snow peas in your garden?? How cool! Just sitting there and eating them, wow! I am planning on planting some this year, although I don’t have a garden, so I don’t know yet how….but I’m crazy about getting some fresh peas!!

      Hi Jane.
      Rocket is arugula or rucola. As far as I know the word ‘rocket’ is mainly used in british english. When I first came across this salad they said it’s rocket, so I say rocket nowadays still 🙂

    What kind of chili are you referring to? Chili powder? What variety? Chopped chilis? What heat?

      Hi Donna,
      You can use fresh, chopped chilli, but chili powder or flakes work well too. I’d say use whatever you like here, and whatever heat you enjoy. 😊
      I’ve made this salad with fresh Thai chili (bird’s eye), as well as with habanero, both are great. But usually I just use chili flakes. This is the brand I get here in Germany, unfortunately I don’t know what variety it is.
