Kale is super trendy, super delicious and super versatile. You can use it in salads, soups, stews, burgers, smoothies, there are endless options. Since it is still kale season, I thought I will share with you some of the best kale recipes. These are all amazing!
The story is simple. Germans love kale, they eat a lot of it this time of the year. They cook it and serve it with sausage. One little problem is that they only sell kale here in 1 kg bags. Do you know how much 1 kg of kale is? A lot! Almost too much. Especially if you eat it mainly raw….That’s why I’m always searching for new recipes not to get bored of it.
Let’s talk about kale a bit. It is a nutritional powerhouse, basically everything you need. It contains a lots of fiber, cancer fighting anti-oxidants, iron, calcium and vitamin A, C, K. And it is alkaline! And tasty and pretty, most importantly.

I like to buy the huge bags of spinach and kale that are offered in my supermarket. I usually take 2/3s of the package, massage the kale, then put individual portion sized in a freezer bag and freeze for later use. No wasting!

Great idea about freezing! So you freeze it raw? Then use it for cooking later or how? What do you cook with it? I’ve only frozen kale pesto and I used that for sauces, but that’s not enough to use up a whole bag. I’d love to learn how to freeze kale properly, I just have again a lot 😀

Hi Evi. I just wash it, spin it dry in a salad spinner, and freeze. I put it in my morning smoothie and I use it in cooked recipes. I guess the only thing I haven’t used it in is a salad. I’m not sure how that would work out.
