After last week’s list about freezable soups, stews, and pasta sauces here comes the second part, pretty much with everything else you would like to eat.
These recipes are once again all great to prepare in batches, and then freeze. They are perfect for busy weeknights, or for unexpected situations when we can’t cook suddenly. They are also good for reducing waste and saving money. And they are especially excellent these days, when we should avoid leaving our homes as much as possible. If you have these freezer-friendly vegan meals at home, you don’t have to run to a supermarket every day.

Main dishes
These main dishes are all delicious, nutritious, and luckily they all freeze really well. You can freeze them in larger quantities, if you plan to feed a family, or in single portions for a quick meal for one.
Savoy Cabbage Rolls (Freeze cabbage rolls and parsnip puree separated)
Mushroom and Chestnut Stuffed Seitan Roast (You can freeze this after baking in one piece, or sliced)
Hungarian Bread Dumplings w/ Root Vegetable Sauce (Freeze dumpling, sauce, and mushrooms separated)
Vegan Mushroom Stroganoff (Freeze stroganoff and potatoes separated)
Pumpkin & Walnut Stuffed Christmas Wreath (You can freeze this after baking in one piece, or sliced, then warm up in the oven)
My Go-To Pizza Dough (Shape one portion of dough into a ball, and freeze that way. Thaw in the fridge for a day, then use as you’d the fresh dough)
Hungarian Stuffed Cabbage (Best to freeze without extra liquid. When reheating, add a little water with a sprinkle of paprika, if needed)
Vegan Shepherd’s Pie (You can freeze it before, or after baking. Best to freeze in a dish, which can be directly put into the oven)
Pesto and Olive Stuffed Mushrooms (Freeze them after baking. To thaw bake in the oven for 10-15 minutes)
Stuffed Squash with Walnut and Beans (You can freeze squash and walnut-bean mix separated, or already assembled. To thaw bake in the oven for 10-15 minutes)

These patties and burgers can be all simply frozen after baking, cooking, or frying. To thaw bake them in the oven for 10-15 minutes, or fry in a pan until heated through. You can eat these patties in burgers, wraps, sandwiches, as salad toppings, or as a quick snack with a dipping sauce.

Salad Dressings
I love to make a huge portion of these kind of dressings when I make salads, and freeze the leftovers for later. They can make pretty much any salad taste good, and most of these also work as a dip for veggies or crackers.
It’s best to freeze them in smaller portions, 1-2 servings is ideal. Let dressing thaw out on its own in a day or 2 in the fridge. You might find you have to adjust the consistency of your dressing with a little extra water or oil, it’s absolutely normal. Dressings sometimes become a bit lumpy after thawing them, but with a little extra whisk they’ll be smooth and creamy again.
Most of these recipes also include the salad or veggie bowl, so simply omit those part of the recipe. Salads are not very freezer-friendly meals.

Rather than a store-bought tv dinner, THIS is my idea of a frozen meal! I hadn’t thought about making and freezing dressings in advance though. That’s so smart, especially when it’s tough to get perishables, and thus hard to make them last long enough. I know what I’m doing tomorrow!

I didn’t know for a long time that you can freeze dressings either. Most sites says you can’t freeze dressings, but I realized it’s because they use dairy or egg, which will separate. However with vegan dressings I had a lot more luck 😛
