Apple mint smoothie with cucumber, kale and green tea is so refreshing, the perfect way to start your mornings. As most smoothies it takes just a few minutes to make and requires only a couple of delicious ingredients.

I rarely drink smoothies for breakfast, I usually crave something savory in the mornings. But there is a time between breakfast and lunch when I feel a bit down and need a little snack and that’s where a good smoothie comes to save me. Thank you, Mr. Smoothie! This apple and mint one is just perfect for me, the cucumber, green tea and lime wake me up with their fresh taste, the coconut water and apple give a slight sweetness while the kale makes everything even healthier. Seriously amazing!

These ingredients work also great as a simple drink. Just add a large handful of mint leaves and a few slices of apple, cucumber and lime into your green tea and you get the very best refresher. Or blend them together using more tea or coconut water, it’s gonna be also delicious!

Ingredients

Units Scale
  • 1 green apple
  • 1/2 cucumber
  • handful of fresh mint leaves
  • handful of kale (or spinach)
  • 1/3 cup of coconut water
  • 1/3 cup of cold green tea
  • ice cubes
  • lime juice


Instructions

  1. Cut the apples, cucumber and kale into smaller pieces and add to a blender with mint, green tea, coconut water, ice cubes and a drop of lime juice. Blend until smooth. Enjoy!

    This is a smoothie that I want to give it a go 🙂 Haha great minds think alike btw, I recently posted a coconut mango protein refresher on the blog, which also uses coconut water – tasty and refreshing 🙂

    This looks just wondeful! I’ve never been able to make a good smoothie with apples myself – but this looks so good. I have to try it some time 🙂

      I find that some apples are amazing in smoothies and some just don’t work for me at all. I really don’t know what’s the secret 😀

    There’s so much deliciousness going on in this smoothie…. where do I start? That MINT! So refreshing and delicious… I make a smoothie every morning, save the occasional poached egg, but it’s my favorite way to start the day! Pinning this one to try! Thank you Evi. Have a beautiful weekend!
