This raw beetroot noodles with avocado recipe is a very quick and simple one: maximum 10 minutes to make and you only need 3 ingredients for it! It can be an eye-catching starter or small snack, a delicious salad or side dish, or just a light and healthy dinner. Oh, spiralized beets, can you be any prettier?!
Do you know the struggle when you have no idea how to call a recipe? Beetroot noodles, beet pasta, beet spaghetti or just simply spiralized beetroots? Avocado sauce, dressing or almost-guacamole? Is it just me who finds it a very difficult task to name a dish? I look around the internet and everybody is so creative with their food names and I am so jealous! Can I please hire somebody to invent cool and catchy names for me? I would be so thankful!
So yes, the name of the recipe is not so appealing, but believe me, the recipe itself is! It is so so simple to make but looks absolutely fabulous. And tastes wonderful too (of course). Beets and avocado are so good for you, you should definitely make this (once a week)!

PrintBeetroot Noodles with Avocado
- Total Time: 10 mins
- Yield: 4-6 appetizers 1x
Ingredients
- 2 beetroots
- 1 avocado
- 1 lime or lemon, juice
- 1 clove of garlic (optional)
- chili, salt, pepper
Instructions
- Peel beetroots and make noodles of them using a spiralizer or a grater.
- Smash avocado with a fork in a bowl, add minced garlic, lime juice and seasoning.
- Divide beets between 4-6 serving plates and top with the avocado sauce and fresh chili. Enjoy!

YES! Beets are my favorite thing to spiralizer!!! I don’t peel them though and it helps with “not staining” you hands 😉

Hi Joy, I used minced bird’s eye chili here, but any other type of fresh or dried chili pepper will do the job, depending on how spicy you like your food 😉

I have not been won over by beets yet but I really want to enjoy them because they are so darn good for you! I like your method of making noodles with them. They’re more delicate this way, compared to slices or chunks. The avocado sauce sounds wonderful and seems like a great pairing with the beet noodles!

I always loved baked beets but just started to eat them raw a few years ago. First I just put it in smoothies, then a bit later everywhere. And now I absolutely love them 🙂

I also have problems with my recipe names, I find them so boring. I thought the problem might be that I am not a native English speaker… The salad looks lovely, so few ingredients and so much flavor. I love to eat beetroots raw.

Yes! It must be that, I mean that we are not native English speakers….however, I feel I would also struggle sometimes with Hungarian.

I tried this with frozen beet noodles, topped a few spoonfuls of chipotle salsa and guacamole. It was fantastic! The beets are sweet and balance well with the spicy of the salsa and Creamy guacamole! Will def try this again an maybe with the raw noodles. Thank
