Green Veggie Burger with broccoli, green peas, zucchini, and chickpeas.
Green Veggie Burger is packed with flavor and texture, thanks to all the nutritious green goodness. It’s vegan, gluten-free, and can be made oil-free. Plus Green Veggie Burger is actually even good for you, since it’s high in protein, and full of vitamins and minerals. Eating your veggies doesn’t seem that bad anymore, right?
If you are looking for an easy, veggie packed burger patty, look no further, because I have the perfect recipe for you. Green Veggie Burger is a great way to sneak more vegetables into your diet, but still enjoy a delicious burger.
Making these babies is very simple.
You start by sautéing some broccoli, green peas, zucchini, and onion. Then you add cooked veggies to a food processor with some chickpeas, oats, chia seeds, and seasoning, and pulse a few times so everything is well combined, but still have some texture.
With the seasoning I like to keep things simple, so I use nutritional yeast, nutmeg, garlic, and a bunch of fresh herbs. Parsley, mint, basil, chives, and cilantro to be exact. However you can add many more things to make it even more flavorful.
Chili, cumin, smoked paprika, turmeric, thyme, coriander, or curry powder could all work here well. Basically if you like the taste of green veggies, go easy with the spices, but if you struggle with broccoli, make sure to add lots of flavors to the patties.
Once you made your green mixture, decide what size you want your patties to be. I like the mini version with salads and buddha bowls, the regular ones are great on a classic bun with ketchup, mayo, and your favorite toppings, and the extra large ones can be used as a flatbread or pancake with toppings.
The recipe below yields for 6-8 regular sized patties, or 12-16 mini ones, or 4-5 large ones. Any leftover keeps well in the fridge for a few days, and you can also freeze the patties. Or if you don’t need that much burger, simply half the recipe.
Green Veggie Burger can be both baked and fried, depending on what you prefer. The pan-fried version tastes better in my opinion, but the baked version is a bit healthier.
For the toppings here I used arugula, vegan cheese and aioli, sriracha mayo, tomato, cucumber, and red onion rings. Not the most creative version, but definitely always a winner.
I also like to serve these with some salad. A creamy kale salad with crunchy veggies and nuts tastes the best with these patties.

Ingredients
- vegetable oil (optional)
- 1 onion, diced
- 4 cups/250 g broccoli florets
- 1 cup/125 g frozen green peas
- 1 cup/100 g grated zucchini
- 1.5 tbsp ground chia seeds
- 1 cup/100 g oats
- 1.5 cups/250 g cooked chickpeas
- 4 tbsp nutritional yeast
- 1 bunch/50 g fresh herbs (such as parsley, mint, cilantro, basil, chives)
- 4 cloves of garlic
- pinch of nutmeg
- salt, pepper
Instructions
- Heat up 1 tablespoon of oil in a large pan. Add onion, broccoli florets, green peas, and zucchini, and cook over medium heat, stirring occasionally, for 10-15 minutes, or until everything is cooked through. If making oil-free, simply use a few tablespoons of water instead of the oil.
- Meanwhile in a small bowl mix together ground chia seeds and 4 tablespoons of water. Let set for 5-10 minutes to thicken.
- Add veggies, chia gel, and the rest of the ingredients to a food processor, and process for a short time. It’s best to pulse the mix, so you’ll still have some texture left, while everything gets combined too.
- If your food processor is not large enough, work in batches, or blend wet and dry ingredients separately, then mix to combine in a large bowl. Adjust seasoning with salt and pepper, if needed.
- If you have extra 30 minutes, chill the mix before making patties. Otherwise you can start directly. Shape the mixture into 6-8 patties (for different sizes see my notes above).
- For the pan-fried version, heat up a little oil in a pan over medium heat. Add burger patties, and cook for 1-2 minutes on both sides.
- For the oil-free version, bake patties at 200°C/400°F for 35-40 minutes, flipping halfway, or until golden.
- Serve Green Veggie Burger warm on a bun with vegan cheese, veggies, and condiments of your choice, or on a salad drizzled with your favorite creamy dressing. Enjoy!
