- for the ice cream:
- 1 mango
- 1 frozen banana
- 1/2 cup of cashews
- 1 vanilla bean
- for the pudding:
- 1/2 cup of plant milk (I used almond milk)
- 2 tbsp chia seeds
- 2 tbsp rolled oats
- 1 tbsp agave syrup
- 1/2 tsp cinnamon
Instructions
- Start by soaking the cashews for a few hours. In an other bowl mix together the chia seeds, the oats, the milk, the cinnamon and a spoon of agave. Let it set for at least an hour.
- Peel the mangoes and place them in a food processor with the frozen banana, vanilla bean and the soaked cashews. Blend until creamy. You can add a splash of milk so it blends easier.
- Layer the pudding and the mango cream in a glass and add your toppings. Enjoy!
