Chia Pudding with Mango Ice Cream

Ingredients

  • for the ice cream:
  • 1 mango
  • 1 frozen banana
  • 1/2 cup of cashews
  • 1 vanilla bean
  • for the pudding:
  • 1/2 cup of plant milk (I used almond milk)
  • 2 tbsp chia seeds
  • 2 tbsp rolled oats
  • 1 tbsp agave syrup
  • 1/2 tsp cinnamon

Instructions

  1. Start by soaking the cashews for a few hours. In an other bowl mix together the chia seeds, the oats, the milk, the cinnamon and a spoon of agave. Let it set for at least an hour.
  2. Peel the mangoes and place them in a food processor with the frozen banana, vanilla bean and the soaked cashews. Blend until creamy. You can add a splash of milk so it blends easier.
  3. Layer the pudding and the mango cream in a glass and add your toppings. Enjoy!
