Dried Tomato Hummus

Ingredients

Scale
  • 1 can of chickpeas
  • 2 tbsp tahini
  • 1 lemon
  • 23 tbsp olive oil
  • 1/2 cup of dried tomatoes
  • a handful of fresh basil
  • 1 clove of garlic
  • salt, pepper

Instructions

  1. Rinse the chickpeas with cold water and squeeze the lemon.
  2. Place the juice and chickpeas in a food processor with all the ingredients. Blend until smooth. If too thick add more olive oil or a few tablespoons of water. Serve with olive oil and pine nuts on top. Enjoy!
