Fig & Green Pea Salad with Vegan Tofu Feta

This fig and green pea salad with tofu feta is the perfect quick, late summer or early autumn meal. Sweet, savoury, fresh, a tiny bit spicy and tangy, simply full of awesome flavours. The juicy figs and my easy tofu feta is a match made in heaven! A quick, light and healthy lunch with a slice of toast, or a fabulous side to whatever is on your plate as a main today.

Vegan Tofu Feta Cheese

One of the most popular recipes on the blog is my Tofu Feta Cheese recipe. I’ve got a lots of sweet comments about how much you like it and some really pretty pictures of your own creations. It’s one of my favourite recipes too and I make a big batch almost every week. I’ve always felt it’s kinda obvious what you can use these little cubes for, but after I posted this picture on Instagram and in some Facebook groups last week, I realised that many of you would like to get a bit more creative with these, meaning not just eating Greek salad all the time. Though I totally understand you, sometimes that’s all I wanna eat too.

So first of all, tofu feta cheese is probably the best bread topping ever. I especially love it with ajvar, spicy chutneys and bean spreads. It’s also amazing as a soup and pasta topping. Fresh, minty, green soups and sweet tomato sauce work the best probably. You can also bake with these, although that way they can lose a bit of their flavour. These are also delicious on tacos, wraps, pitas or burritos, you name it. And of course, probably the most basic yet my fav way to eat these is to top any and every salad with them. You can simply never go wrong with this.

I’ll be honest, it’s not the fanciest salad I’ve ever made, it’s simply a mixture of random leftovers I had at home. Not that this fact would make it less delicious…..just felt it’s always better to be honest…

Ingredients

Units Scale
  • 4 cups of salad greens
  • 2 figs
  • 1 scallion
  • 1/3 cup fresh or frozen peas
  • 1/3 cup tofu feta cheese

For the dressing

  • 2 tbsp apple cider vinegar
  • 2 tbsp mustard
  • 2 tbsp maple syrup
  • 1/4 tsp garlic powder
  • salt, pepper


Instructions

  1. Slice figs, chop scallion, then add to a bowl with the salad greens, tofu feta and fresh peas (if using frozen, place peas in a colander and run it under hot water for a minute to thaw, then let drain). Mix well together.
  2. For the dressing combine vinegar, mustard, maple syrup and garlic powder, then season with salt and pepper.
  3. Drizzle the salad with the dressing. Enjoy!

    This is truly genius, Evi! I quite like tofu, but I don’t add it in salads since it’s a little bland to me. The idea of marinating it sounds fantastic and just right to me. Thank you for the idea, and perhaps from now on I will be having tofu more often in my meals:)

    Interesting ingredient combination Evi, but I think that great tofu feta cheese will go nicely with any fruit and vegetable mix…
