Mini Flaxseed Tarts with vegan tofu cheese and caramelized onions.
These little Flaxseed Tarts are seriously delicious. The amazing 2-ingredient (!!!) flaxseed crust is filled with a creamy and tangy tofu cream cheese, and then topped with sweet caramelized onions and toasted walnuts. Flaxseed Tarts are great as a starter or main dish for your holiday menu.
These vegan Flaxseed Tarts are so so so good, I really want you to try them.
They are fairly simple to make, and they are also totally customizable. They can be served both warm or at room temperature, so these tarts can be prepared a bit ahead as well. Sounds good, doesn’t it?
The star of this recipe is hands down the flaxseed crust. It’s incredible, but all you need is ground flaxseeds and water to make it. These two ingredients combined make a perfect dough, similar to the ones you use for pie or quiche. Easy to shape, to roll out, to press, and just in general to handle.
Though this flaxseed crust is super duper healthy, it doesn’t taste like eating a cup of flaxseeds, I promise! The crust is thin and firm with a slight chewiness, and it tastes really good. Sort of nutty, earthy, and very hearty.
I went with a simple tofu cream cheese to fill these flaxseed tarts, but you can try other things as well. Since the crust is so hearty and savory, something light and fluffy goes best with it.
For example hummus, cashew cheese, or lentil spread work great as a cold filling. Or if you want something warm, use my trusty and beloved Olive and Artichoke Tart filling, or this lighter Vegan Quiche filling. Or simply some hot tomato sauce or roasted and pureed root veggies.
To finish these little Flaxseed Tarts I topped them with buttery caramelized onions and walnuts. They give the perfect sweet touch, and a light crunch. It’s a lovely wintery combo, that I can never get enough of.
Sautéing onion with vegan butter makes it extra rich and flavorful, but you can also omit the butter, if you want to keep this recipe on the very healthy side. Use water, white wine, or vegetable broth, 1-2 tablespoons at a time, and keep the temperature very low.
But if onions are not your thing in general, use something completely different to top these Flaxseed Tarts. Roasted chickpeas, grilled vegetables, pickled cauliflower, toasted nuts, tofu feta, or some spiced vegan minced meat would be lovely as well.
So get creative with these babies, and make them part of your Christmas dinner!

Ingredients
Flaxseed crust
- 1 cup/125 g flaxseed meal
- salt
Tofu cheese
- 1.25 cups/250 g of silken tofu
- 2 tbsp nutritional yeast
- 2 tbsp ground almonds
- 1.5 tbsp apple cider vinegar
- 1 clove of garlic
- 1.5 tsp white miso
- 1 tsp mustard
- salt, pepper
Caramelized onions
- 1 tbsp vegan butter
- 2 red onions, thinly sliced
- 3–4 sprigs of fresh thyme
- 2 tbsp toasted, chopped walnuts
- salt, pepper
Instructions
Flaxseed crust
- Preheat oven to 180°C/360°F.
- Add flax meal and a large pinch of salt to a bowl. Pour 1/2 cup or 120 ml warm water over flax meal, then using a spoon start to mix together.
- Using your hands knead until it starts to hold together. You might need to add 1-2 tablespoons of water, if the dough is too dry. Make sure you never add more than 1 tablespoon extra water at a time, otherwise dough can get too wet.
- Knead dough for a minute, or until it forms a smooth ball, that doesn’t stick. You should be able to roll out and shape dough without using any flour or oil to dust or grease surfaces.
- Divide dough into 6 portions, then transfer a portion to a working surface. Roll out into a 1/8 inch/4 mm thick disks, then place into a small tart form (4 inch/10 cm).
- Repeat with the remaining dough.
- Gently press dough into the forms, then using a knife trim off any excess dough.
- Pierce with a fork, then bake for about 20 minutes, or until crust slightly shrinks and fully hardens.
- Let cool completely, then remove from tart forms.
Tofu Cheese
- Place tofu cheese ingredients into a blender or food processor, and process until creamy. Place in the fridge until ready to serve.
Caramelized Onion
- Heat up butter in a large pan over low heat.
- Add onions and thyme, and cook on low heat for 20-30 minutes, stirring every few minutes, until onions are very soft and caramelized. Stir in chopped walnuts, and season with salt and pepper.
Assembly
- Fill each tart crust with tofu cheese, then top with caramelized onions. Serve immediately at room temperature as a starter, or place in the oven to warm up, and serve as a main dish. Enjoy!

These are really intriguing. I like the idea of the crust from flaxseeds, it is healthy. They look very nice too, perfect for a Christmas dinner as the starter.
