Kale Waldorf Salad

I love the good old Waldorf salad! Apple, celery and walnut are such a winning winter combination. I mentioned it before, but this time of the year I feel like eating salads all the time. Salads can give me a huge energy boost, which is all I need nowadays. I try to keep my salads seasonal, so no wonder that this kale Waldorf salad is often on our table in these months.

To be honest I’ve never been a huge fan of mayo, so I mostly eat Waldorfs at home leaving the mayonnaise out. I like toΒ use yogurt or some nut or seed creamΒ as a dressing, it’s just so much more better that way! Healthier, tastier and definitely not that heavy.

Just like always, you can add so many extras to this salad. First of all, caramelized walnuts are possibly the coolest topping in the world,Β they make any salad taste extra special. But pecans are also pretty cool. If I need a very filling salad, I like to add some croutons too, or just simplyΒ use double amount of the dressing. OrΒ for example withΒ adding a bit of cooked quinoa this salad will be satisfying for anyone.

Ingredients

Units Scale
  • 3 cups of chopped kale
  • 1 cup of shredded apple
  • 1 cup of shredded celery root
  • 1/2 cup of walnuts
  • for the dressing:
  • 1/4 cup of sunflower seeds
  • 1/4 cup of cashews
  • 1/2 cup of water
  • juice of a lemon
  • 1 tsp mustard
  • 1 clove of garlic
  • 2 tbsp olive oil
  • salt, pepper


Instructions

  1. AddΒ the shredded apples, celery root, the toasted and roughly chopped walnuts and kale leaves toΒ a big bowl.
  2. For the dressing blend all the ingredients in your food processor until smooth. Add more water if it’s too thick.
  3. Pour the dressing over the salad and mix well together. Enjoy!

    Yum, I’ve been looking forward to seeing this recipe ever since I was your picture of the celery root and the kale on instagram. Sounds so wonderful!
    I am not a fan of mayo either, so I always sub with yoghurt – because that is so damn delicious πŸ™‚

    I make pretty similar salad when I get my hands on the celery root; it’s without kale and cashews, and it’s pretty good, so i know this baby also is πŸ˜‰
