This beautiful lentil and brussels sprout salad is a healthy and filling one, packed with flavour and a lots of crunch. It’s one of those comforting autumn salads, which is instantly becoming everybody’s favourite. Trust me, your mouth will be watering as you put this stuff together.
Other than pumpkin I am also excited about brussels sprouts this season. Of course I don’t talk about the overcooked and stinky ones with that weird and super strong aftertaste, but I can always find love in my heart for delicious roasted sprouts or the even better raw salads. Brussels sprouts are full with cancer-preventing phytonutrients and vitamin C and K. They also contain omega-3 fatty acids and a good amount of dietary fiber. When they are thinly sliced they taste absolutely wonderful, so please set aside your childhood brussels sprout traumas and embrace these beautiful little cabbages.
I believe crisp shredded brussels sprouts and pomegranates are meant to be eaten together. Especially tossed with a creamy orange and tahini dressing and topped with toasted pine nuts. And let’s not forget the protein bomb lentils. Mmmmm….so good together. This salad makes a delicious side dish or a simple, but filling dinner and keeps well in a fridge for a few days, so also great for potlucks or picnics. So be prepared to love it!
You can shred the brussels sprouts with a sharp knife, but I prefer to use a mandolin or a food processor. This way it’s very easy and quick to make this salad.

Lentil and Brussels Sprout Salad
- Total Time: 10 mins
- Yield: 4-6 1x
Ingredients
- 2 cans of lentil
- 300 g brussels sprout (about 2 cups of thinly sliced brussels sprout)
- 1 purple onion
- 1 pomegranate
- 1/4 cup of pine nuts, lightly toasted
- 1 orange, juice+zest
- 1 lime, juice
- 1 tbsp maple syrup
- 2 tbsp tahini
- 1 tbsp olive oil
- salt, pepper
Instructions
- Shave brussels sprouts (using a sharp knife, a food processor or a mandolin), drain and rinse lentils and slice onion thinly. Add everything to a large bowl with pine nuts and seeds of half of the pomegranate.
- Prepare dressing. Mix together juice of lime, orange and the other half of the pomegranate, orange zest, tahini, maple syrup, olive oil, salt and pepper. Pour over the salad and mix well together. Enjoy!

Yes! Raw brussel sprouts in a salad are by far one of the best substitutes for lettuce. So healthy and love the added crunch. mmm

I love brussels sprouts. I made a big dish of roasted ones for Thanksgiving and surprisingly the whole family ate them up and said they loved them. Now to convince everyone that raw brussels in a salad are just as tasty and nutritious. Love the addition of the pomegranate here, probably adds such a tasty sweet element!

LOVE the idea of raw brussel sprouts in a salad! The only way I have eaten them is sautéed with olive oil/salt/pepper but I think I need to branch out from that – and all the flavours you have going on here are awesome, especially with the pop of pomegranate and the maple-tahini dressing! YUM! <3
Sautéed brussels sprouts sounds delicious too, but you definitely have to try them raw! Since I first tried them raw I only eat them like this 😀
