Mediterranean Orzo Salad

Ingredients

Units Scale
  • 1,5 cup of orzo
  • 1 cup of roasted bell pepper
  • 1 cup of kalamata olives
  • 1 cup of cherry tomatoes or diced tomatoes
  • 1/2 cucumber
  • 1 red onion

For the dressing

  • 2 cups of fresh parsley
  • 2 cloves of garlic
  • 2 lemon, juice and zest
  • 2 tbsp tahini
  • 2 tbsp hemp seeds
  • 2 tbsp nutritional yeast


Instructions

  1. Prepare orzo according to package instructions. Drain well and transfer to a large bowl to cool.
  2. Cut bell peppers into small pieces, halve cherry tomatoes and slice thinly cucumber and onion. Add them to cold orzo with the olives.
  3. For the dressing add ingredients to a blender and blend until smooth. Add a little bit of water if too thick.
  4. Add dressing to the bowl and toss gently to combine. Serve warm or chilled. Enjoy!
