Mini Cauliflower Pizza

Mini cauliflower pizza is so yummy! The cauliflower dough is extra soft and has amazing earthy and nutty flavors, you just can’t resist it. It can be the perfect appetizer and an even better main dish.

Happy Valentine’s Day! I’ll be honest with you, I just couldn’t care any less about such holidays, so forgive me I do not have anything pink or sweet or heart-shaped for you today. But something way better! You know, that I like to experiment with healthier versions of pizza. I really love this chickpea crust or this pumpkin crust pizza too. But I guess the cauliflower one is my absolute favorite. It just tastes so amazing, and the best part that it is so quick to make. You just blend the cauliflower, mix with the other ingredients, bake for half an hour and that’s it. So simple!

I like to eat my pizza with pesto instead of tomato sauce, and I add my toppings just at the very end, so they are all fresh, but you can add them a bit earlier. I’d say about 5-10 minutes before the pizza is ready. But feel free to do whatever you want, of course…

Ingredients

Units Scale
  • 1 cauliflower
  • 1 cup of ground hazelnuts
  • 4 tbsp chia seeds + 8 tbsp water
  • 1 tsp oregano
  • salt, pepper
  • toppings of your choice


Instructions

  1. Start by adding chia seeds to a bowl with water and let set for 15-20 minutes. Preheat the oven to 180°C.
  2. Cut cauliflower into smaller pieces, add to a food processor and blend until it has a rice-like consistency. Transfer to a big mixing bowl. Add ground hazelnuts, spices, chia mixture and mix well together.
  3. Line a baking tray with baking paper. Make 6-8 small pizzas by flattening the dough with your hands. Bake for about 30 minutes or until golden brown. Add your toppings and serve warm. Enjoy!

      Cauliflower is just so amazing, you can use it in so many ways! I love to experiment with it, especially to replace carbs 🙂

      Thanks, Josefine! I really love cauliflower crust, it is so easy and quick. I don’t say it tastes 100% like the original pizza, so actually I prefer to think of them not as pizza but as little cauliflower cakes. But they taste so good and you can hold a slice just as a real pizza 🙂

      Hi Lisa,
      I used raw cauliflower, never tried with cook.
      And of course you can also use ground almond or any other nuts you prefer 🙂

      It’s a simple homemade basil-dill pesto, I’m sure any kind of pesto would be delicious here 🙂

      I added 8 tablespoons of water here, but it can be a little bit less or more for you, depending on your chia seeds.

      Hi,
      I am not sure, because these little pizzas are very delicate and they fall easily apart.
      But it surely worth a try! Maybe try to make a thicker “dough”, by first squeezing out of the cauliflower as much liquid as you can.

    I have found that these cauliflower crust freeze very nicely, after they are cooked!! Makes for a great last minute dinner or whatever!! Love your recipes!!
