Pickled Rainbow Cauliflower

Ingredients

  • 1 head of cauliflower, cut into smaller florets
  • 11 oz/350 ml apple cider vinegar (or other vinegar of your choice)
  • 34 oz/1000 ml water
  • 2 tsp salt
  • 34 tbsp maple syrup (or use sugar, agave, etc.)
  • flavorings and colorings of your choice (see above)


Instructions

  1. Place vinegar, water, salt, and maple syrup to a pot, and bring to a boil. Cook for 2-3 minutes, or until salt dissolves.
  2. Fill jars with cauliflower florets, and add flavorings and colorings of your choice. Use one large jar, if you make one flavor/color, or multiple small ones for each flavor/color.
  3. Pour hot brine over cauliflowers, then let cool completely before placing in the fridge. Pickled cauliflower tastes best, if you let it marinade for 2 days before serving.
  4. Cauliflower will keep for 3-4 weeks in the fridge. Enjoy!
