- 1 cup of cooked white beans
- 3 tbsp almond butter
- 2 tbsp miso
- 1 roasted red bell pepper
- 1 clove of garlic
- 1 tbsp chopped fresh dill
- 6 slices of whole-grain bread (use GF if needed)
- 1,5 cups of mixed greens
- 1 cup of fresh sprouts
Instructions
- Combine beans, almond butter, miso, bell peppers, garlic, and dill in a food processor and blend until smooth and creamy, 3-4 minutes. Scrape down the bowl as needed to get everything incorporated.
- To make the sandwiches, top 3 slices of bread with some of the mixed greens. Scoop 1/2 cup of the spread over the mixed greens, then top with some sprouts and the remaining 3 slices of bread. Enjoy!
