Ingredients

  • 1 cup of cooked white beans
  • 3 tbsp almond butter
  • 2 tbsp miso
  • 1 roasted red bell pepper
  • 1 clove of garlic
  • 1 tbsp chopped fresh dill
  • 6 slices of whole-grain bread (use GF if needed)
  • 1,5 cups of mixed greens
  • 1 cup of fresh sprouts

Instructions

  1. Combine beans, almond butter, miso, bell peppers, garlic, and dill in a food processor and blend until smooth and creamy, 3-4 minutes. Scrape down the bowl as needed to get everything incorporated.
  2. To make the sandwiches, top 3 slices of bread with some of the mixed greens. Scoop 1/2 cup of the spread over the mixed greens, then top with some sprouts and the remaining 3 slices of bread. Enjoy!
