Purple Potato Towers with beetroot hummus and roasted garlic sauce.
Purple Potato Towers make a great side dish for your holiday menu. Creamy mashed purple potatoes with tahini, then a layer of beetroot hummus, topped with garlic microgreens, chili threads, and fermented black pepper. Served with roasted garlic sauce. Despite it all sounds and looks complicated, these purple-pink towers are actually very easy to prepare. And they look absolutely stunning!
Let’s start today with a little life update. In case you don’t follow me on Facebook or Instagram (or in case you belong to the 95% whom my posts never reach on social media 🙄), you might have missed, that I got married last week. Woohoo!
We went to a small village near the sea, about an hour drive away from Hamburg. It was the only place we found that allowed people to get married from other cities.
You see, bureaucracy is always a nightmare in Germany, but now with corona times everything got even worse. And the fact that a German and a non-German tried to get married made things even more difficult. For the past few months we had zero idea whether we will be able to marry within a few days, or just in 1-2 years.
We were literally prepared for anything and everything.
So yeah, we were really happy last Monday morning when we were finally heading to that village. Due to corona restrictions, there was nobody to make our hair or do my make-up and nails. We obviously also took Laika dog with us, so we were wearing sweatpants.
Once we arrived to the registry office, it turned out Laika is not allowed inside. They actually said this before, but we really hoped we could convince them otherwise. We couldn’t. So we quickly switched to something prettier in the car, locked Laika in with snacks and new toys, and went inside.
It was all pretty formal, signing papers, proving we are not siblings, etc. We were done in about 15 minutes with everything.
We hopped back into the car, and headed to the nearest river dam to take a few pictures. Luckily the nearest place looked pretty cute and was also relatively empty. I put my phone on a tripod, and took about 15 pictures of the three of us. It was cold, windy, and rainy, so that was all we were capable of.
Then we drove back home, where we ate some falafel, berries, nuts, cashew cheese, fermented tofu, and drank some grape juice. Talked with our family on the phone. Took back the car to the rental place. Got home, and opened a bottle of champagne. And that was it.
It was not at all how we planned it, but due to corona that’s all we’ve got. We were not allowed to have any guests for the ceremony, plus my family and friends from Hungary couldn’t have travelled here anyway. Restaurants were all closed, and meeting with any friends after it would have just felt weird.
However, we actually plan to have a ‘real wedding’. We have booked a venue for a small celebration with friends and family for next year in Hungary, and that’s what we see as our actual wedding. However until that I didn’t want to keep saying ‘my BF’ here, that’s why I’m telling you the story of our weird little corona wedding.
So, fingers crossed our proper wedding is gonna work out there finally!! We are very excited for it! ❤️
Purple Potato Towers w/ Roasted Garlic Sauce
Wedding talk is finally over. And it’s december, so it’s time to start sharing holiday recipes. Are you happy?
The first on my list is gonna be one for these cute little Purple Potato Towers.
Listen, this recipe seems pretty fancy, but the truth is it’s actually nothing more than mashed potatoes with hummus. But you know what? That’s what’s so genius about this recipe.
It’s all super simple, and easy to make, yet the end result is something beautiful and 100% insta-worthy.
To make these Purple Potato Towers you’ll need a dessert or plating ring, or a smaller cake mold. If you don’t have such things, don’t worry, you can simply cut out a ring from a small can, a beer can, or a metal pipe. Just make sure to sand it down very well, so you won’t cut yourself, and more importantly, won’t have metal pieces on your plate!!!
You know I always say this, but this recipe is just a little idea and you can totally play around with it.
I used purple potatoes because I adore the color, but white potatoes can look just as pretty too. Or orange or purple sweet potatoes. Also, feel free to add extras for additional flavor and texture. Caramelized onions, tempeh bacon, chopped nuts, or fresh herbs would be amazing here.
On top of the potatoes beetroot hummus works really well, but you can also use Pumpkin Hummus, Sour Cream, or a Carrot Dip. Or just crumble some Tofu Feta Cheese there.
Then to top these Purple Potato Towers, I used fermented black pepper (which is my new obsession), garlic sprouts, and chili threads. I liked the look and the taste of this combo, but honestly, there are a million other options I can imagine here.
A beautiful avocado rose, maple roasted nuts, shaved Brussels sprouts or fennel salad, grilled veggies, a mini tofu skewer…so many options!
And yeah, the garlic sauce. Of course, feel free to omit it. But also, please don’t do it, coz it’s delicious, and goes well with these Purple Potato Towers.

Ingredients
Purple Potato Towers
- 500 g/1 lb purple potatoes
- 2 tbsp tahini
- 3 tbsp vegan butter (or more tahini)
- 1/2 cup of unsweetened plant milk
- 4 tbsp nutritional yeast
- 1 tsp garlic powder
- 1/8 tsp nutmeg
- salt, pepper
Roasted Garlic Sauce
- 1 tbsp vegan butter
- 1 tbsp flour (use GF if needed)
- 1/2 cup of unsweetened plant milk
- 1 head of roasted garlic
- salt, pepper
To Serve
- 1.5 cups of beetroot hummus
- chili threads
- garlic microgreens or sprouts
- fermented black pepper
Instructions
Purple Potato Towers
- Scrub or peel potatoes, then cut into smaller pieces. Add to a large pot with salt water, and bring to a boil. Cook for 15-20 minutes, or until potatoes are tender.
- Drain potatoes, then return to the pot. Add tahini, butter (or more tahini), milk, nutritional yeast, garlic, nutmeg, and a generous pinch of salt and pepper.
- Mash potatoes with a potato masher, until you reach desired consistency. Add a little extra milk, if needed, but make sure mashed potatoes are not too runny, otherwise they won’t hold together in the mold.
Roasted Garlic Sauce
- Heat up butter in a pan. Sprinkle with flour, and whisk to mix. Gradually add milk, whisking constantly, to make sure no lumps are left.
- Cook for 2-3 minutes, whisking continuously, until sauce thickens.
- Add roasted garlic pieces, and season with salt and pepper.
- If you want a smooth sauce, transfer to a blender and process for a few seconds.
- If you don’t mind garlic pieces in your sauce, simply mash larger garlic cloves with a fork.
Assembly
- Place dessert or plating rings on your serving plates. You can use a larger cookie cutter or a smaller springform cake pan, if you don’t have plating rings. The plating ring I use is 3 inches/8 cm.
- Spoon potatoes into the rings, packing them tightly with your fingers, a small spoon, or the flattening top part of the rings.
- Spoon beetroot hummus over the potatoes, slightly flattening the surface again.
- Gently remove the rings.
- Top purple potato towers with fermented black pepper, chili threads, garlic microgreens, or anything else you like. Serve with roasted garlic sauce on the side (or poured over the towers). Enjoy!

I follow you on Instagram and I missed the wedding update. Social media is a pain most of the time. Congratulations!!! All three of you look wonderful and while it might not have been what you dreamed of, it was memorable, and wonderful nonetheless.

Congratulations! I am wondering though: how do you ferment peppercorns? I searched and found photos of people doing it, but no instructions.

I bought my fermented peppercorns in a jar. Since I have still a lot in my jar (they are so flavorful, you only need a tiny amount), I never thought of making it myself. But it would be super cool to do so!!
