Quick Avocado Pasta

This incredible creamy, easy and quick avocado pasta is a delicious light vegan meal option, perfect after a gigantic Christmas feast. You only need a few simple ingredients and less than 15 minutes to whip up this delightful meal. It’s incredible satisfying, highly shareable, but also makes a great lunch or dinner for one.

Hey friends, how was your Christmas? Did you eat lots of food? Receive the best gifts? Have snowball fights? Watch any lame Christmas movies? Travel a lot? Hate your family? Or if you don’t celebrate Christmas, how was your weekend? Right now I am just trying to recover from days of heavy meals and continuous snacking. I just want to eat something light and fresh. So now I’m all about salads and quick pastas. If you’re anything like me, this recipe is just what you need.

I’m a sucker for anything with avocado, but this pasta may be my absolute favourite avocado recipe ever. The combination of avocado, lime, lemon and fresh basil is so refreshing and rich. And not to mention it’s nutritious, filling but still light. Serve it with your favourite (gluten-free) pasta or zucchini noodles.

Ingredients

Units Scale
  • 450 g / 1 pound of pasta of your choice
  • 2 avocados
  • 1 lemon, juice+zest
  • 1 lime, juice
  • 2 cloves of garlic
  • bunch of basil
  • cherry tomatoes
  • salt, pepper


Instructions

  1. Prepare your pasta according to package instructions (or spiralize 3 zucchinis).
  2. Meanwhile add avocados, lime and lemon juice, garlic, fresh basil, salt and pepper to a food processor and blend until smooth.
  3. Combine avocado sauce with the pasta. Serve warm or cold with lemon zest, more fresh basil and cherry tomatoes on top. Enjoy!

    So do I, Evi – tired of the heavy food and in need of the lighter options. That’s why I’m eating only ice cream now. Haha just kid. This creamy dreamy pasta is exactly what I’d love to have right now (To balance out the ice cream):) Delicious stuff!
