Quick Red Lentil Cream Soup with Dried Tomatoes

Ingredients

  • 1 cup of red lentils
  • 1 onion
  • 4 cloves of garlic
  • 6 dried tomatoes
  • 0.6 liter hot water or vegetable stock
  • 1 tsp thyme
  • 1/2 tsp chili
  • 1 tsp basil
  • 1 tsp rosemary
  • salt, pepper
  • coconut oil

Instructions

  1. Heat a little coconut oil in a saucepan. Chop the onions and garlic finely and add to the coconut oil. Fry them for a few minutes.
  2. Add the lentils and spices and fry for one more minute. Add the hot water or veggie stock and the dried tomatoes and cook for about 15-20 minutes.
  3. Once everything is cooked, pour everything in your blender and blend until smooth. Serve warm with a little bit of lemon juice. Enjoy!
