Hungarian style Sauerkraut Soup with smoked tofu is a wonderful winter soup.
This vegan Sauerkraut Soup is a true winter hero. It’s packed with vitamins, minerals, and protein, so it’s simply perfect for colder weather when you need something heartwarming and healthy. It’s also simple, easy-to-make, and a very budget-friendly recipe. And most importantly Sauerkraut Soup is seriously delicious, so if you’re a fan of sauerkraut, you must try it!
Listen, I’m not gonna lie, this soup is everything, but pretty. So if you’re looking for a recipe to post on Instagram, or to please the eye, you might wanna make another soup.
Yes, this soup is ugly, but it’s so good, I had to share with you. It’s savory, smokey, slightly sour, and extremely tasty. I’m normally not a fan of eating the same food for days and weeks, but this Sauerkraut Soup is somehow magical, and I ate it pretty much every day recently. So trust me when I say, it’s AMAZING!
As with most recipes, this Sauerkraut Soup is totally customizable, so make sure you adjust it to your liking. Give or take any veggies, use more broth, if you prefer a more watery finish, and add your favorite spices. The red lentils are a great addition to this soup, because they make it nice and thick, but you can also omit them, or use a plant-based creamer or coconut milk instead. I like to make a big batch of the soup, since it keeps well in the fridge for a long time, then have it as a hearty main with some bread, or just as a quick snack throughout the day.

Sauerkraut Soup with Smoked Tofu
- Total Time: 30 minutes
- Yield: 4-6 1x
Ingredients
- 1 large onion, about 1 cup diced
- 1 carrot, about 1 cup diced
- 1 potato, about 1 cup diced
- 2–3 cloves of garlic, minced
- 2/3 cup of red lentils
- 4–5 cups of vegetable broth
- 2 bay leaves
- 1 tsp apple cider vinegar
- 1 cup of sauerkraut, rinsed and drained
- 1 cup of diced smoked tofu
- salt, pepper
To serve:
- vegan sour cream or soy yogurt
- bread
Instructions
1. Start by sautéing chopped onion and carrot in a pot with a few tablespoons of water (or vegetable oil, if you prefer). After 5-10 minutes when onions are soft, add diced potato, garlic, lentils, broth and bay leaves.
2.Cover, and bring to a boil. Reduce heat, then simmer for about 15 minutes or until veggies are tender.
3.Meanwhile heat up a non-stick skillet over medium-high heat. Add diced tofu, then fry on each side for a few minutes, until nice and crusty.
4.Chop sauerkraut roughly, then add to the soup with apple cider vinegar, and cook 1-2 minutes, until everything is heated together. Remove bay leaves, and season with salt and pepper.
5.Serve each portion topped with sour cream and smoked tofu. Enjoy!

tofu are the best cube thing i loved the most winter is almost over here so i’ll try out this soup before the winter ends ingredients are so easily available here for this recipe great 🙂

I really want to try this recipe. However, I cannot find smoked tofu at any of my Asian or health food stores. Any suggestions on how to do this at home?

I’ve never tried smoking tofu at home, I’m not sure how it works.
If you can’t find smoked tofu, you could try using vegan ham or sausage instead here. Or simply omit it (or use regular tofu). I really enjoy that smokey flavor the tofu toppings add here, but the soup is also nice without that 🙂
