Kale Salad with Tahini and Citrus Dressing

It is still citrus and kale season! So why not to make this kale salad with tahini and citrus dressing? The kale tastes simply amazing with these two. Like it was meant to be this way…..and then come the pine nuts and pumpkin seeds to make it a perfect, filling meal. Love, love, love!

This dressing is very similar to this one, I absolutely love tahini with any citrus juice. I used now mandarine, lime and grapefruit, but use whatever you like. Oranges, lemon, blood oranges, etc. are all good. You can leave out the thyme, but I am a huge fan of this combination, I often drink citrus-thyme water too. Just delicious!

Ingredients

Scale
  • 4–5 large handful of kale
  • pine nuts and pumpkin seeds for topping
  • for the dressing:
  • 2 tbsp tahini
  • 1 lime
  • 1 mandarine
  • 1/2 grapefruit
  • 1 tsp fresh thyme
  • salt, pepper


Instructions

  1. Squeeze the citruses and mix the juices with tahini, thyme, salt and pepper until smooth.
  2. Prepare kale by removing the stems then tearing into small pieces. Add the leaves to a big bowl with the dressing and massage them together for 2-3 minutes. Serve with pine nuts and pumpkin seeds on top. Enjoy!

    I’ve yet to make a tahini based dressing. I don’t know why.. I eat salads like mad. You’re salad is especially appealing due to all the citrus you’ve included in the dressing! I’m going to have to try this Evi! Love your beautiful, bright photography, especially of the citrus! Thank you for sharing your recipe!

      I love anything with tahini, so I put it in as many dressings as possible. I love that you can make a thick, creamy and rich dressing without any special effort 🙂

    This sound amazing and is so up my alley!! I’ve been drizzling tahini over everything these days and I can’t make a single salad dressing without adding some citrus to it! This looks like the perfect kale salad 🙂

      I think so too! I almost use tahini and some kind of citrus for my massaged kale.
