Simple Raw Zucchini Roll-Ups

Ingredients

  • 1 large zucchini
  • 810 asparagus
  • 3 scallions
  • 1 cup of cashew cream cheese
  • small bunch of fresh dill
  • salt, pepper


Instructions

  1. Using a mandolin or a sharp knife slice zucchini into thin strips.
  2. Trim asparagus, and cut the tip end into 6-8 cm/2-3 inch long pieces.* Halve thicker stems lengthwise. Halve scallions lengthwise as well then cut into smaller pieces.
  3. Put a dollop of cashew cheese at the end of a zucchini slice. Top with asparagus, scallion and dill, and season with salt and pepper. Roll up tightly and place seam side down on a serving plate. Repeat this with remaining zucchini slices. Enjoy!

Notes

* I only used the tops of the asparagus here, but you can use the ends as well, if you prefer. Or you can save them for later to make a soup or stir-fry.
