This snow peas salad takes about 5 minutes to prepare and requires only a few ingredients but tastes amazing! The sweet peas with some lemon zest and chili are a wonderful combination!
I really love snow peas, in general any type. They are just so sweet! I remember when I was small it was my favorite snack from my grandparents’ garden. We were sitting next to each other on a small stool, they were shelling the peas for lunch and I was eating them all. They must have been so happy! 😀
This hasn’t really changed, most of the time when I get my hands on fresh peas I still eat them right away as a snack, so I rarely make any dish with them. But now I was strong, and kept some for this delicious salad. I definitely didn’t regret it, this salad tastes so good, so fresh!

Simple Snow Peas Salad
- Total Time: 15 mins
- Yield: 4 1x
Ingredients
- 2 cups of snow peas
- half of a cucumber
- 2 cups of rocket salad
- 1/2 cup of roasted almonds
- 3 tbsp olive oil
- 1 lemon
- chili, salt, pepper
Instructions
- Slice cucumber, cut snow peas thinly lengthways and chop almonds roughly. Add to a bowl with the rocket.
- Make a dressing with olive oil, juice of a lemon and some salt and pepper. Pour over the salad and mix well together.
- Sprinkle some chili on top and the zest of a lemon. Enjoy!

I love a simple and quick salad like this! It also looks delicious! I can’t remember the last time I cooked with snow peas and I’m trying to figure out why! They look like they would give such a great crunch to this salad and I love the lemon 🙂

Rocket is arugula or rucola. As far as I know the word ‘rocket’ is mainly used in british english. When I first came across this salad they said it’s rocket, so I say rocket nowadays still 🙂

You can use fresh, chopped chilli, but chili powder or flakes work well too. I’d say use whatever you like here, and whatever heat you enjoy. 😊
I’ve made this salad with fresh Thai chili (bird’s eye), as well as with habanero, both are great. But usually I just use chili flakes. This is the brand I get here in Germany, unfortunately I don’t know what variety it is.
