Simple Vegan Balsamic Lentil Stew

Ingredients

  • 1 large onion
  • 2 cans of lentil
  • 3 cups of vegetable broth (or water)
  • 4 tbsp tomato paste
  • 1/3 cup of balsamic vinegar
  • 2 tbsp maple syrup
  • 1 tbsp fresh thyme
  • 1/2 tsp liquid smoke (optional)
  • salt, pepper

Instructions

  1. Chop onion. Drain and rinse lentils.
  2. Add lentils, onion and broth to a pot, and cook over medium heat for about 10 minutes.
  3. Add tomato paste, vinegar, maple syrup, liquid smoke and thyme and cook for about 10 more minutes, stirring occasionally, until the sauce thickens.
  4. Season with salt and pepper. Serve warm. Enjoy!
