Smashed Purple Potatoes

Oh, how simple and delicious these smashed potatoes are! You boil some potatoes, smash them, then bake and the best side dish is ready. It is everything I want from a (side) dish: potatoes, softness and crispiness at the same time.

Smashed Purple Potatoes

I thought using purple potatoes could make this simple dish a bit more festive, so just perfect for Christmas time. Looking at this wonderful purple color I am kind of sure these smashed purple potatoes are going to be part of our Christmas dinner. They are so pretty!

I have to admit, I am able to eat these potatoes as a main course or later, cold as a snack, without anything. But they are also amazing with any simple sauce, I especially love them with cashew sauce, or with créme fraiche, or with an avocado dip or with a spicy tomato sauce.

Ingredients

Units Scale
  • 1 kg purple potatoes
  • 3–4 tbsp olive oil
  • 1 clove of garlic
  • thyme, parsley, salt, pepper
  • handful of pine nuts


Instructions

  1. Boil the potatoes in salty water for about 20 minutes or until they are fork-tender. Drain them and let them cool for a few minutes, so you don’t burn yourself.
  2. Preheat oven to 200°C. Arrange the potatoes on a baking tray and smash them using a cup or glass or a small bowl.
  3. Mix the olive oil with the crushed garlic and spices and drizzle the potatoes with the mixture. Bake them for about 20 minutes, then garnish with herbs and nuts. Enjoy!

    These are beautiful Evi! I love purple potatoes, and putting a spicy dollop of guacamole on top of them sounds like an awesome appetizer for a holiday party.

    Wauw! Where did you get those? I’ve never heard of purple potatoes before. They are gorgeous. And so is you potography 😉

      I thought you don’t like potatoes 😀
      But yes, they are so pretty and they are really this purple, it’s not PS.
      I got them from a supermarket, I don’t know why, normally they don’t have such cool stuffs there 😉

    I’ve never known that purple potatoes exist! It looks fabulous. What is the taste like? Is there resemblance with regular potatoes? I wish I could try them.

      Purple potatoes are seriously amazing! The truth is that they taste exactly like the regular ones, but they look so much more fabulous! Kind of black from the outside, but deep, vibrant purple on the inside 🙂
