- 150 gr soba noodles
- 3–4 spring onions
- 1 cup of chopped carrots
- 1 bell pepper or 6 mini peppers
- 1 chili
- handful of roasted peanuts
- 2 tbsp peanut butter
- 2 tbsp peanut oil
- 1 tbsp maple syrup
- 1 clove of garlic
- 3 tbsp tamari or soy sauce
- 1 lime, juice + zest
- small piece of ginger
- water
- Sriracha
Instructions
- Prepare your noodles according to package instructions. Drain and rinse with cold water.
- Dice peppers, chili and carrots, slice spring onions and add to a big bowl with the cold noodles.
- Whisk together peanut butter, oil, maple syrup, tamari, grated garlic and ginger, lime juice and a little bit of water. For me the tamari is salty enough, but you can add additional salt if needed.
- Mix well together noodles, veggies and dressing. Serve with lime zest, peanuts and Sriracha. Enjoy!
