Soba Noodle Salad with Peanut and Ginger

Ingredients

  • 150 gr soba noodles
  • 34 spring onions
  • 1 cup of chopped carrots
  • 1 bell pepper or 6 mini peppers
  • 1 chili
  • handful of roasted peanuts
  • 2 tbsp peanut butter
  • 2 tbsp peanut oil
  • 1 tbsp maple syrup
  • 1 clove of garlic
  • 3 tbsp tamari or soy sauce
  • 1 lime, juice + zest
  • small piece of ginger
  • water
  • Sriracha

Instructions

  1. Prepare your noodles according to package instructions. Drain and rinse with cold water.
  2. Dice peppers, chili and carrots, slice spring onions and add to a big bowl with the cold noodles.
  3. Whisk together peanut butter, oil, maple syrup, tamari, grated garlic and ginger, lime juice and a little bit of water. For me the tamari is salty enough, but you can add additional salt if needed.
  4. Mix well together noodles, veggies and dressing. Serve with lime zest, peanuts and Sriracha. Enjoy!
