Creamy Vegan Sun-Dried Tomato Pasta with hummus and roasted zucchini.
In this Sun-Dried Tomato Pasta recipe two awesome things are combined to create an extra creamy and flavorful sauce. Pesto rosso and hummus together is a match made in heaven, that happens to be perfect for pasta. Serve it cold or warm, with roasted zucchini, fresh basil, and pine nuts on top.
Quick post today, because there’s not much to say about this Sun-Dried Tomato Pasta. If you like Mediterranean flavors, more specifically hummus, and sun-dried tomato, you probably already know, that this recipe is something for you.
It’s one of those classic flavor combos, that I’m always totally down for. Especially because it’s easy to make, and the leftovers taste even better the next day!
And also, because it’s one of those forgiving recipes, where you really don’t need to use a measuring cup. A little more or less of any of the ingredients will just give it a personal touch.
I went with roasted zucchini here this time, but there are a million other great additions to use. You can roast some broccoli, cauliflower, eggplant, red onion, or bell pepper. Or skip the roasting part altogether! Simply add cooked beans, spinach, summer squash, or cherry tomatoes at the end to the pasta.
When making the sauce, you can always adjust the ratio of ingredients to your liking. And of course, play around with anything, you can pretty much give or take whatever you want.
Add to the blender some olive oil for creaminess, or a cup of spinach for extra nutrition. Don’t have walnuts? Use pine nuts, sunflower seeds, or almonds instead. Like things hot and spicy? Add a squeeze of hot sauce or a piece of fresh chili to the sauce.
But if you don’t like to play with food, just follow my measurements. It’s a pretty awesome version, if I do say so myself.
BTW this sauce makes a great bread spread! So feel free to double or triple that part of the recipe to have some extra deliciousness for toasts.

PrintSun-Dried Tomato Pasta w/ Roasted Zucchini
- Total Time: 45 minutes

Ingredients
- 3 small zucchinis (12 oz/350 g)
- 1 tsp oil (I use the oil from the tomatoes)
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- 1/8 tsp chili powder
- 7 oz/200 g pasta (use GF if needed)
- 1/4 cup/25 g walnuts, toasted
- 3 oz/85 g sun-dried tomatoes
- 2 tbsp nutritional yeast
- 2 tsp tahini
- 1/2 lemon, juiced
- 20 large basil leaves + more to serve
- 1/2 cup/ 100 g hummus
- 2–3 tbsp pine nuts, toasted
- salt, pepper
Instructions
- Cut zucchinis into small pieces. In a bowl, toss zucchini pieces with oil, garlic powder, smoked paprika, chili powder, salt, and pepper.
- Place zucchini pieces on a baking tray in a single layer, and bake at 200°C/400°F for 30-40 minutes, flipping halfway.
- Meanwhile prepare pasta according to package instructions. Drain, reserving some pasta water, and return to pot.
- While zucchini is baking and pasta is cooking prepare the sauce. Add walnuts, sun-dried tomatoes, nutritional yeast, tahini, lemon juice, and basil to a food processor, and process until well combined, but still chunky. You can also blend it creamy, if you prefer.
- Add hummus, season with salt and pepper, and pulse a few more times, until you reach desired consistency.
- Pour sauce over the pasta, add roasted zucchini, and mix everything together. Add enough pasta water (1/3-1 cup) to make the sauce creamy. Serve immediately warm, or chilled, topped with pine nuts and basil leaves. Enjoy!
