Sweet Potato Patties w/ Sunflower Cheese

Vegan Sweet Potato Patties with quick sunflower seed cheese.

Easy to make Sweet Potato Patties are wonderful little savory fritters, that are crispy on the outside and soft on the inside. You only need 3 basic ingredients plus some spices to make these patties. Served with quick sunflower seed cheese they make a lovely snack, side, or weeknight dinner with a big bowl of salad.

This recipe is vegan, gluten-free, and oil-free. I like to bake the Sweet Potato Patties, but you can also fry them in a pan with a little oil to get an extra crispy finish.

Sweet Potato Patties are also versatile and totally customizable. The base of this recipe is mashed baked sweet potatoes, flax egg, and some flour. And then you can add to these whatever you like.

In this version I went with nutritional yeast, chili, lots of garlic, some herbs, and smoked paprika. They fit really well to these sweet and savory patties. But there are million other ways to flavor your patties: turmeric, curry, cinnamon, ginger, sage, rosemary, parsley, fried or caramelized onions, tomato paste, miso…just to mention a few options.

Usually I eat these Sweet Potato Patties with a big lemony mixed green salad. But they are also great as a side to vegan meats, or as a breakfast food (kind of like a sweet potato hash brown). They also make a simple snack with a delicious dipping sauce. Guacamole, ketchup, mayo, or garlicky soy yogurt fit all well to these. Or my current favorite: sunflower seed cheese!

Sunflower seed cheese is made just like the popular cashew based one, and tastes almost identical as well. Pretty much the only difference (and the best part), that it’s a much cheaper option.

Whatever you decide to serve Sweet Potato Patties with, make sure to freeze a few extra patties for later, because they make an awesome quick meal or snack!

Ingredients

  • 5 sweet potatoes
  • 1 tbsp ground flax seeds
  • 1 cup of brown rice flour
  • 3–4 cloves of garlic, minced
  • 1 small chili, minced
  • 3 tbsp nutritional yeast
  • 1.5 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • salt, pepper

For the sunflower seed cheese:

  • 1 cup of sunflower seeds, soaked
  • 4 tbsp nutritional yeast
  • 2 cloves of garlic
  • 1 lemon, juiced
  • salt, pepper


Instructions

  1. Pierce sweet potatoes with a fork or knife, then bake at 200°C/400°F for 45-60 minutes, or until soft (baking time depends on their size). Set aside until cold enough to handle.
  2. Mix together ground flax seeds and 4 tablespoons of water. Set aside for 5 minutes to thicken.
  3. Once sweet potatoes cooled down, peel them, and measure out 2.5 cups of baked sweet potato flesh. Place in a mixing bowl and mash them.
  4. Add flax mix, flour, garlic, chili, nutritional yeast, basil, oregano, paprika, and a large pinch of salt and pepper, and stir to combine. Mixture should be moist, but shapeable. Adjust seasoning if needed. Let set in the fridge for 20 minutes.
  5. Preheat the oven to 200°C/400°F. Make about 12 patties, using an ice cream scoop to portion the sweet potato mix, then flatten them with your hands.
  6. Place them on a baking sheet, and bake for 10-15 minutes on each side, or until golden brown.
  7. While sweet potato patties are baking, prepare sunflower seed cheese. Place ingredients into a blender or food processor with about 2/3 cup of water, and blend until creamy. Adjust consistency with water if needed (cheese will thicken in the fridge, if you don’t serve it directly).
  8. Serve sweet potato patties warm or cold with sunflower seed cheese on the side. Enjoy!

    These look so nice. I usually bake sweet potatoes, but your recipe makes me wonder if I shouldn’t prepare them in a different way too.
