I’ve just realized there is only one pasta recipe on the blog. It’s funny, because I eat pasta all the time. For me it’s the quickest way to have a filling and delicious dinner.
I love this tomato sauce because all you need is a blender or food processor. You can even use canned tomatoes instead of cherry tomatoes, it’s gonna be still so tasty! It is also awesome as a pizza sauce, on grilled veggies or as a quick ketchup.
And the vegan parmesan? Oh my goodness! I think I’m not exaggerating when I say it’s really good on everything and anything. I use it on pasta, pizza, salads, soups and sandwiches everyday. It’s cheesy and salty, perfectly satisfying. You can make a larger amount, it will keep for a few weeks in the fridge.

Ingredients
- 10 cherry tomatoes
- 6 sun-dried tomatoes
- 3 tbsp tomato paste
- 1 small chili
- 1/2 cup of fresh basil
- 2 tbsp dried oregano
- 1 clove of garlic
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- salt, pepper
For the parmesan:
- 1 cup of cashews
- 1/2 cup of nutritional yeast
- 1/2 tsp garlic powder
- 1/2 tsp salt
Instructions
- Deseed chili then add every ingredient for the sauce to a food processor and blend until smooth. Pour the sauce over the warm cooked pasta. You can also heat up the sauce before serving.
- For the parmesan add everything to a food processor and pulse until fine. Store in a jar in the fridge. Enjoy!
