The Plant-Based Journey • REVIEW + GIVEAWAYI am so excited to talk about Lani Muelrath‘s newest book today: The Plant-Based Journey – A Step-By-Step Guide for Transitioning to a Healthy Lifestyle and Achieving Your Ideal Weight. It’s a wonderful guide on how to create your own journey for health and answers any of your question and concern about transitioning to a plant-based lifestyle.

I am always so curious about what makes one going plant-based. I have heard so many different stories and it always fascinates me why people decide to adopt a healthier and more ethical way of eating and living. Many of you know I was vegetarian most of my life (thus found it always easy cooking and eating this way), but becoming vegan was a long and sometimes challenging experience for me. Because change is not easy, especially if it’s a big change for a life time. For me it was always great to know that I am not alone and others struggled with similar or sometimes totally different issues too. It was always good to remember that everybody had different motivations and goals and that for some it takes longer to make a switch. Because there is definitely not just one way to go plant-based and that’s exactly what Lani knows so well.

Though I would never say it is a difficult thing to go plant-based, let’s be honest, it can be a rough journey. From dealing with friends and family through travelling to just the lack of recipe ideas, there can be so many common issues that most of us has faced or about to face when transitioning to a new lifestyle. The Plant-Based Journey is a book that helps you with all those issues with an amazing six step program.

She is definitely someone I want to learn from. She has so many tips and tricks, for example on how to just move a little bit more throughout every day.

The book is written in an extremely user friendly way and has easy to follow steps. It will help to begin and to maintain your own plant-based journey for optimal health. I feel like this book could become your best friend who always knows what to do and who always has a good answer to your questions. I’m not kidding, this book really covers every single question about plant-based living.

What I love the most about the book is that it provides plant-based recipe templates, so instead of exact recipes it gives guidelines to make YOUR version of the meal. That is exactly the way I love to cook! The book has also a shopping list and a a long list of plant-based replacements, as well as a bunch of super quick (10minutes!) recipes. Hello double chocolate cherry truffles, portobello pot roast and cranberry sauce with dates & oranges (recipe below)!

I can truly say The Plant-Based Journey is a fantastic resource to inspire you and your friends and family to make the first step. Cranberry Sauce with Dates & Oranges

Description

This sugar-free version of a holiday favorite has been a hit 100 percent of the times that I’ve served it, and has been one of the most popular recipe downloads from my blog. Buy extra cranberries when they are in season and store them in the refrigerator so that you can make this all year long. It’s great for topping oatmeal and pancakes, or spread in sandwiches.


Ingredients

Units Scale
  • 8 Medjool dates, pitted
  • Juice from 1 orange
  • 1/4 cup water
  • 1 (12-ounce) bag fresh cranberries (about 2 1/2 cups)
  • 1 tablespoon orange zest


Instructions

  1. Soak the dates overnight in the orange juice for a few hours or overnight.
  2. In a high-powered blender or food processor, blend the dates with the juice and the water.
  3. Put the date mixture in a large pot with the cranberries. Cook over high heat for 5 minutes, then reduce the heat to low and cook for about 15 minutes. Add more water as needed so the mixture stays liquid though dense, like thick, chunky applesauce. Remove from the heat.
  4. Let cool and store in the refrigerator. Serve as you would any cranberry sauce: with holiday dinners, or on cooked whole grains, mashed potatoes, your morning oatmeal, or to perk up a sandwich.

Notes

If you’re in a hurry, you can probably skip soaking the dates. If you do, cook them for a few minutes longer to soften.

    My fave plant based dish is butternut squash roasted with spices. I also love anything with avocado, and sauted Brussels sprouts !

    Curry! I am obsessed with indian food and I thought I would miss all those lovely rich curries and masalas as a vegan. Boy was I wrong! The veggie combinations are endless! My current fav is a pumpkin chickpea coconut curry over tumeric-spiced basmati rice. YUM.

    My favorite vegan dish is from the Oh she glows Cookbook. It’s the Avocado pesto pasta. IT IS AMAAAAAAAZIIING!!! Also it is fast and easy to make 🙂

    Since turning to a plant based diet I fell in love with avocados!! :):)

    hmmm…my favorite plant-based recipe…man, that’s a hard one. I’m going to have to go with an astringent herb salad…lots and lots of parsley, some arugula, some mint, lots of chopped celery, red onion, chickpeas (or edamame), and sometimes a grain…white wheatberries or quinoa…and a lemon vinaigrette, maybe with coarse Dijon mustard, definitely garlic…

    yeah…I’m a SALAD kind of gal!

    I like to make zucchini noodles and add cauliflower onions mushrooms broccoli and some cashew nuts to a pan stir fry just a bit so they are still crispy and add some yellow curry sauce. My other favorite plant based dish is pho with lots of veggies, yam noodles and top it off with kimchee.
